Burma — 'twisted'. Kadayif strands wound tightly around a pistachio core into long logs, ranked across the tray and baked until crisp, then cut to portion. Holds its crunch exceptionally well, which makes it one of the best travellers in the range. Holds its crunch better than anything else we make, which makes it the safest line on a long or unpredictable route.

12 months at -18 C, or 4 days at 0-4 C. It is blast-frozen within hours of baking, so it arrives with the texture of the day it was made.
