The roll that carries our city's name. Pistachio-wrapped pastry coiled around a core of Maras kaymak, finished with a whole pistachio kernel set into the cream at each end. Served chilled. Rich, cold and unmistakably regional.

Fistik Sarma. Fine phyllo wound tightly around a dense pistachio filling and rolled in pistachio again, then cut into short cylinders and packed shoulder to shoulder. Almost entirely nut, lightly sweetened — the purest pistachio expression we make.
