Bird's Eye or Palate Cracker with Pistachio

What separates them

Bird's Eye
Kuş Gözü
Kus Gozu — the bird's eye. Each piece is a curl of pistachio-coated pastry with a single whole kernel set into its hollow, ranked so the tray reads as rows of watching eyes. Detailed, delicate and a favourite for premium assortment boxes.
Each piece holds a whole kernel in its hollow - too detailed to bury in a large tray, and at its best in a gift box.

Palate Cracker with Pistachio
Fıstıklı Damak Çatlatan
Damak Catlatan — 'palate cracker'. A deep slab of ground pistachio and kaymak cut into generous squares and finished in more pistachio. Almost no bake colour and very little pastry: this is nut and cream, served cold, in its most concentrated form.
Nut and cream in their most concentrated form, with almost no pastry. Serve cold, in small squares.
